I have a holiday cheat for you: cookies without baking.  Decadent but inexpensive.  Impressive but quick to put together.  These are cookies for the non-bakers, for the sweet-toothed, for the candy-cane lovers.  And they’re so, so good.

IMG_1192I came across these cookies last month at the bookstore where I work, and it was instant love.  Sweet, festive and something I’d never had before, I wanted to give them to everyone I knew!  They were also crazy expensive for something that seemed relatively straightforward to replicate: Oreo cookies dipped in white chocolate and covered in crushed candy cane.  I decided to make them myself.  It was a good call: I ended up with 30 cookies for less than the price of a store-bought package of 8.

IMG_1191Notes on crushed candy cane: While it’s something you can buy at Bulk Barn, you can also make it easily by smashing up your own candy canes.  I chopped some up on a cutting board, and Dave suggested using a food processor next time for bulk jobs, which is probably the more efficient way to go.  The finer the grind, the better!

White Chocolate Candy Cane Oreos

Ingredients

30 Oreos (give or take)
12 ounces white chocolate, chopped
1/2 cup crushed candy cane

1.  Place the white chocolate in a bowl and microwave in 15 second bursts, stirring in between, until smooth.

2.  Dip an Oreo into the melted chocolate until coated on both sides, and place it on a large sheet of parchment paper to dry.  Continue with the remaining Oreos.

3.  While the Oreos are still wet, sprinkle them generously with crushed candy cane.  Set aside until hardened.
